Ash dusted, soft-ripened cheese fashioned after those found in Langhe, Italy. While traditionally made from a combination of cow, sheep, and goat milk, Boxcarr uses 100% cow milk, rendering their cheese dense, mellow, and creamy. It will evolve from week to week, developing notes of butter-roasted mushroom and toasted almond.

Boxcarr takes their inspiration from small Italian farmstead creameries. Their local milk is sourced from a few small family-owned dairies who raise their cows with the greatest of care and highest standards. Milk from their own loved herd of mixed-breed dairy goats is also part of the mix. In addition to supporting these small dairy businesses, they employ a handful of locals, teach through internships, and employ youth through Orange County Second Family Foundation. In their words, they aim to "create something wonderful, meaningful and delicious."
